Weekend Update + Beef Carnitas

I can’t believe it is already Tuesday. Packing has been overwhelming so I was unable to post yesterday. Hopefully everyone is having a great week so far!

Last weekend the hubs and I took a quick trip to Raleigh for the weekend for our One Year Anniversary! {Where has the time gone?} Since we are in the middle of moving we wanted a quick getaway for a couple days. We came back to Wilmington Sunday morning in time for church. I hope your weather was better than ours! It was cold, windy and rainy. Despite the weather we had a wonderful Easter with our friends and family away from home. Take a look!

Our dinner Friday night was top notch at 18 Seaboard. The decor of the restaurant was rustic yet sophisticated. Not to mention the food was amazing.

 Saturday morning was more than relaxing. The weather was cold and rainy so after working out and enjoying a lazy breakfast we headed to get couples massages. Yes I said it. Couples massage. This was the hubs first massage and I think there may be more in the future. {Fingers crossed}

Saturday night was completed with a casual dinner in Raleigh. This burger place was wonderful! I am not a huge burger fan, but this place turned me into one that night. Two thumbs up from me!

This past Sunday marked our one year. {April 20,2013} The Lord has truly blessed us this past year and we are excited to see what the Lord has in store for us in the many years to come!

 

I wanted to share a simple and delicious recipe with you from Eat, Live, Run! A sweet friend of mine who is an amazing cook made this for us a few weekends ago. She sent us the recipe and let me tell you, delicious. Instead of using the spices listed, she substituted a taco seasoning pack. Even better!

Crock Pot Beef Carnitas (recipe from here)

What you will need:

  • 2 lbs flank steak
  • 1 yellow onion
  • 1 green onion
  • 1 red onion
  • 1 jalapeno, seeded and chopped
  • 1 taco seasoning pack
  1. Rub seasoning pack over flank steak. Place steak at the bottom of your crockpot.
  2. Cover the steak with chopped onions, bell peppers and jalapenos.
  3. Turn crock pot on low and cook for 8 hours.
  4. After 8 hours remove steak from crock pot and shred with a fork.
  5. Serve warm and enjoy!
