Weekend Update + Sweet Potato Quiche

Good morning! Sorry for the late weekend update, after coming back into town we immediately started back to work. {Yay for reality} Yes…I said WE. The hubs is FINALLY home! He has officially moved back to Alabama. I never thought this day would come, but I am so thankful it did.


This past weekend was full of family, football and fun. {Get it?} My entire family spend the weekend at the lake. This was our last get together before my sisters wedding. Here is a quick update on our family filled weekend!

If you love quiche you will love the following recipe by Fourteen Forty. During my work week I need a quick breakfast each morning. Sweet potatoes were used as the crust. Need a cheap mandolin? Home Goods for $9. You can’t beat that price.


Sweet Potato Crust Quiche (recipe from here)

You will need the following:

  • 6 small sweet potatoes
  • 1 handful spinach
  • 1/2 small onion
  • 1 garlic clove
  • 4 eggs
  • 1 cup grated mozzarella (or cheese of choice)
  • 1/2 cup cheddar cheese
  1. Peel sweet potatoes and slice thinly
  2. Lay potato slices on pie dish similar to crust. Spray with oil and bake at 400 degrees for 15 minutes.
  3. Remove dish and reduce oven to 375 degrees.
  4. Heat oil and sauté sliced onion and crushed garlic for about 7 minutes. Stir in spinach until wilted and tender, about 4 minutes.
  5. Mix eggs and mozzarella in bowl. Add spinach/garlic/onion mixture to egg mixture.
  6. Place mixture in potato crust. Sprinkle with cheddar cheese.
  7. Bake for about 40 minutes or until firm.
  8. Enjoy!
