Apple Pecan Chicken Salad

Let me start with the highlight of my week…Libby is finally home! Her mommy and daddy are thrilled to have her home after many long weeks. Kathryn started a blog to keep everyone informed on Libby’s progress and this upcoming journey. Praise the Lord she is finally home!

This past week I made some pretty amazing chicken salad {if I do say so myself}. This was my lunch all week. This chicken salad contains 5 ingredients, no mayo and less than $9! Can you beat that?

Earlier this week at the store, chicken breasts were on sale. I bought double the amount of chicken and froze the other half. Freezing is always a money saver. The hubs and I like our chicken salad shredded and creamy. The crockpot was my best friend again with this recipe. Take a look!


Apple Pecan Chicken Salad

  • 3 cups cooked shredded chicken (about 2 chicken breasts)
  • 1 green apple
  • 2 cups dried cranberries
  • 2 cups vanilla yogurt
  • chopped pecans
  1. Place uncooked chicken breasts in crockpot and add 1/2 cup water. Cook on LOW for 4-5 hours.
  2. Shred chicken and allow to cool.
  3. In large bowl mix shredded chicken, diced apple, dried cranberries and yogurt.
  4. Place in fridge to chill.
  5. Enjoy!
