Edamame Balsamic Pasta

We made it through the week! Happy Friday! What are your plans for the weekend? A childhood friend of mine is getting married this weekend, so let the wedding festivities begin!

Have  you ever been at a loss on what to make for dinner? Especially for one? Since the hubs is living in NC for the next couple months, it is hard to make big meals. I don’t want to purchase multiple ingredients just for myself. That is why over the next couple months most recipes will be simple, inexpensive and still taste great!

After rummaging through my kitchen to come up with dinner, I combined a few random ingredients that turned out great! Of course I was lacking shredded cheese which would have made this a thousand times better. It still tasted great and even made enough for left overs! {You can’t argue with that}

Adding more balsamic will give the pasta more flavor. Next time I make this I will make sure I have mozzarella cheese on hand. Make sure the cheese is good and melted and you will fall into a trance. Delicious.

Edamame Balsamic Pasta

  • 2 cups whole wheat penne pasta
  • 2 cups frozen edamame
  • 2 eggs
  • 1/2 tsp balsamic vinegar
  1. Cook pasta in boiling water to desired tenderness.
  2. Scramble eggs in sauté pan and add frozen edamame. 
  3. Add balsamic vinegar and cook eggs until fully cooked.
  4. Drain pasta and add to mixture.
  5. Top with desired cheese and enjoy!
