6 Ingredient Mexican Casserole

How has your week been? Mine has consisted of packing daily. Sadly the kitchen is on my packing “to-do” list today. Our home is far from organized at this point in time. The movers are coming a week from Friday, whether we are ready or not! {Yikes}

Last night after looking through our pantry and fridge, I came up with this Mexican dish. I also wanted to make a healthy dish since we ate poorly over the weekend. My weekly run to the grocery store was a complete fail. My mind has been in twenty different directions. Now I am trying to use what we have! This casserole has 6 ingredients and is less than $6! {I do not count spices} I made a side of guacamole which just made everything better.

  • Quinoa- .95 cents
  • Canned corn- .36 cents
  • Canned black beans- .49 cents
  • Chicken strips- $2
  • Green pepper- .23 cents
  • Cheddar cheese- $1.20
  • TOTAL= $5.23

6 Ingredient Mexican Casserole (Serves 4)

  • 2 cups cooked quinoa
  • 1 cup corn
  • 1 cup black beans
  • 1/2 tsp chili powder
  • 1/2 small green pepper (chopped)
  • 2 cups chicken strips
  • 1 1/2 cup shredded cheddar cheese
  1. Preheat oven to 350 degrees.
  2. Cook quinoa according to package directions. Measure 2 cups cooked quinoa and layer bottom of baking dish.
  3. Rinse and drain canned corn and black beans. Layer on top of quinoa.
  4. Heat pan with olive oil. Cook chicken, green peppers and chili powder until peppers are tender.
  5. Layer chicken in baking dish. Top with cheese.
  6. Spray piece of aluminum foil and cover dish. Bake for 25-30 minutes or until cheese is melted.
  7. Serve with guacamole, salsa, sour cream or chips. Enjoy!

*The price is based on the amount of food I use. Example: Bag of quinoa is $3.50. I used less than one serving from the bag. Overall I used 95 cents worth of quinoa for this dish.
