Sweet + Savory Saturday Breakfast

How was your weekend? Brady and I enjoyed our last weekend home in NC. We are excited for the journey and move ahead but so sad to leave our wonderful friends!

First of all, our healthy eating went out the window this weekend. We indulged in great food and sweets. At least we ran each morning. {Right?} The weather was beyond beautiful over the weekend!

Friday night we had dinner with a beautiful ocean view at Oceanic in Wrightsville Beach. The chocolate chip cheesecake was “superb”. We resorted to taking a selfie. {Our waiter was super busy} Either way it was a great start to the weekend.

Saturday morning started with a run, then we rewarded ourself with a quick and easy breakfast. We do not usually go “all out” for breakfast, but on our last Saturday in our house how could we not?? {Recipes below}

Lets just say the hubs and I became pros at putting off packing Saturday. We had every intention to pack but how could you stay inside on this beautiful day?? We spend the afternoon relaxing by the pool and beach at a friends condo. {Breathtaking} The evening was topped off with Mexican food with some pretty amazing friends.

Sunday consisted of great fellowship with friends at our church, lots and lots of packing, and a round of golf to end the weekend. Now on to the most important topic. Food.

As stated before, the hubs and I love breakfast. We don’t usually make a feast each morning due to time and money. This past weekend we wanted to make a fun breakfast but not break the bank. He wanted something savory and “hearty”, I wanted something slightly sweet.

Solution to making both?? Cinnamon raisin english muffins. These recipes are sure to please both parties without spending a fortune at the grocery store.

Egg & Cheese Sandwich

  • 1 cinnamon raisin english muffin
  • 1/2 tsp brown sugar
  • 2 slices canadian bacon or ham
  • 1 egg (cooked anyway)
  • 2 slices cheddar cheese
  1. Heat skillet and cook bacon until slightly crisp. Sprinkle brown sugar on bacon while cooking
  2. In a separate heated pan, cook egg. Make sureΒ yolk does not cook and remains “runny”.
  3. Once bacon is cooked remove from pan and place english muffin on warm pan. Allow muffin to become warm and slightly crisp.
  4. Remove english muffin from pan and top with cheese, ham and egg.
  5. Place in microwave for 15 seconds so cheese can melt and enjoy!

Cinnamon Raisin French Toast

  • 1 cinnamon raisin english muffin
  • 1/4 tsp cinnamon
  • 2 eggs
  • 1 medium banana
  • Maple syrup or agave
  1. Crack 2 eggs in bowl and add cinnamon. Whisk until well combined.
  2. Spray and warm skillet on medium-high heat. Dip sliced english muffin in egg mixture.
  3. Place each slice on skillet and cook both sides until egg mixture is slightly cooked.
  4. Place english muffin on separate plate and top with sliced bananas.
  5. Sprinkle desired amount of cinnamon and drizzle syrup. Enjoy!
