Fruit Salad + Honey Lemon Dressing

Spring is here! We had warm weather most of the weekend! {Besides a few thunderstorms}

How was your weekend? Friday night the hubs and I had a much needed date night after a crazy week. We had an AMAZING dinner at Circa 1922 downtown. Can I go back please? Dinner is never complete without dessert. Kilwin’s was our second stop for the night.





The rest of the weekend consisted of packing. Still can’t believe we are moving next month. Definitely bittersweet.

Friday afternoon was my cleaning day. I finally gave some attention to a few places around the house that have been neglected. {Procrastination at its finest} Of course cleaning was put on pause a few times to spend some time in the kitchen. After raiding the pantry and fridge, I came up with this concoction. Y’all. This is delicious. Just imagine the summer sun, laying out at the beach and a nice cold tupperware of fruit.

Almost any fruit will work! Take your pick. I used all the fruits in my fridge. Not a fan of coconut? Omit! This just added some extra flavor to the fruit.



Fruit Salad + Honey Coconut Lemon Dressing

  • 1 large green apple
  • 3 clementines
  • 1 cup blueberries
  • 1 cup blackberries
  • 1 cup strawberries
  • Juice of 1 lemon
  • 2 tbsp honey
  • Shredded coconut
  1. Wash and slice fruit according to preference.
  2. Squeeze juice of lemon and add honey to a small microwave safe bowl. Microwave for 15-20 seconds or until honey is able to mix well with lemon juice.
  3. Mix dressing and fruit in bowl. Add desired amount of coconut and toss thoroughly.
